The long candy is twisted and rolled to the right thickness and turn pattern...
Then cut to length with scissors!
The cut sections are rolled constantly, which evens out the thickness and makes the outer surfacer nice and smooth.
The number of cut sections increases, and more staff get involved...
...and even more! Apparently that 32 lb block will make about 64 candy canes...
Ok, but they still don't look like this...
That's because it takes a long time to roll and cool...
...the world just isn't built to the right scale for some helpers...
Ok, here come the tricky bit...
This needs to be a nice smooth 4 inch turn...
And there it is! Actually it takes about 1 minute to make the hook. Too fast and it folds, too slow and it will cool and break before you finish.
Then start lining them up! Hmm... I wonder how those would look in a Christmas stocking? Or taste as a gift!
Another sucessful batch!
